1-Cooking via direct heat:
When you cook with direct heat, temperatures are high and the cooking is concentrated on the grill, which is ideal, for example, to create grill marks on a steak.

2-Cooking via indirect heat:
When we grill, cook or roast indirectly, the heat is homogeneously diffused throughout the closed barbecue. Ideal for baking vegetables or cooking meat at low temperature.
